I really like this dish he made the other night. I think the juiciness from the tomatoes helped balance the saltiness. It goes really great in a sandwich/wrap/taco or if you like me, I like to eat nearly everything with white jasmine rice on the side. This is like meatloaf to me except that it's in a tomato! If you hate tomatoes then skip this recipe 😂 otherwise try it!
INGREDIENTS: 1 Cup of Cooked Jasmine Rice (White Rice) 1 Lb of Grass Fed (90% Lean) Ground Beef 1 Tbsp of Salt & Pepper ½ Cup of Finely Diced Onion ½ Cup of Shredded Sharp Cheddar Cheese 1/3 Cup of Chopped Parsley 2 Chopped Basil Leaves 2 Pressed Garlic Cloves 2 Tbsp of Olive Oil 4 Large Tomatoes INSTRUCTIONS: -Preheat the oven to 325F -Prep the garlic, onion, parsley as mentioned in the ingredients -Cut and scoop each tomato as shown in the video. Be sure not to discard the tomatoes top piece as we will be using that as a lid. -Chop the tomatoes fleshes and keep aside for the mix -Mix together well in a large bowl; beef, rice, garlic, onion, parsley, basil tomatoes flesh, olive oil, salt and pepper. -Stuff each scooped tomatoes with the mix -Sprinkle Sharp Cheddar Cheese on top and cover each tomato with their lid -Bake for 1hr NOTE: You can add lots of cheese in the mix if you want that gooey cheesy texture, enjoy!
